Winemaking support

Wine analyses according to the requirements of the cellar’s winemakers, giving scientific values on the status and content of their wines so adjustments can be made in time.

Bulk & export analysis

Analysis of wine bought in bulk from external sources and other cellars, plus wine exported in bulk and bottled for the local market.

Shipping verification

Export wine is analysed before shipping and again on arrival in the destination country, to determine possible changes in transit.

More than thirty analyses, one laboratory

From alcohol and residual sugar through to cold stability, filterability and malolactic fermentation — the full picture of your wine, measured on calibrated laboratory equipment.

Composition

Alcohol (pycnometer, Alcolyzer & density meter), specific gravity, extract, residual sugars, Balling.

Acidity & sulphur

pH, total titratable acid, volatile acidity, free and total sulphur by Ripper and aspiration methods.

Stability

Protein stability, cold stability, Bento fining, pinking.

Clarity & process

Turbidity, filterability, DCO2, malolactic fermentation (MLF).

OUR STORY

From lab assistant to laboratory owner

Wine Analytical Service Laboratory started as part of Spier Wines in the heart of the Cape Winelands. Over time the service expanded to include customers from other wine producing cellars in the area.

Today WASLab is led by Merecia Smith, who joined Spier in 1998, moved into the wine analysis laboratory four years later, and rose to manage it before launching the laboratory as her own independent business in 2019.
